Tennis, Fro-yo and Shopping

After a long week of work & going back to coaching cheerleading, I am one tired girl! I wake up at 6 on weekdays, but today I got the chance to sleep in until 9:30. It’s the little things that make me happy!

Breakfast: 

I’ve been going for overnight oats the past week but didn’t get the chance to prepare them for today, so I went with hot oats. The weather is starting to heat up but it’s still a little chilly/windy in the mornings here so hot oats was fine with me!

Today’s bowl included vanilla extract, brown sugar, cinnamon, strawberries, blueberries, pecans, a few glazed walnuts and peanut butter. So good!! I’ve been putting glazed walnuts in my overnight oats and they’re delicious! Not the healthiest, but a little bit won’t hurt.

After breakfast I headed out to the tennis courts to meet my friend. I very rarely play tennis so I’m not great at it, but it’s fun to play! I’d actually really like to play more often, it’s a fun sport and it’s great exercise. Another great way to take my workouts outdoors!

It was pretty hot outside so my friend and I decided to go get fro-yo after a while. I guarantee I will never turn down an opportunity to get fro-yo!!

Always go big with fro-yo!! In this bowl is caramel & white chocolate fro-yo with toasted coconut, strawberries, Butterfinger and the best cookie dough ever. My favorite combo lately!

After fro-yo & tennis time I headed home. At lunch time I heated up a couple pieces of a mozzarella, cheddar, spinach, tomato & buffalo sauce pizza I made on Thursday night.

After lunch my mom and I met up to go shopping together. I’m looking for anything and everything to decorate my new house with so it was a huge search! We went to a couple stores and I found a lot of really great stuff I can’t wait to get. One thing I did pick up is some chalk labels for glass jars in the kitchen. I am determined to keep this house organized and this is one step in that direction!

Once we were done I heated up some homemade clam chowder my dad made and put it in a sourdough bread bowl. This was my first time having homemade clam chowder and it was amazing!

The rest of the night will be spent lounging around doing a whole lot of nothing! I love having some spare time to just hang out and relax. I hope you all are having a great weekend!!

Going for the Goals Week #1

When Jenny posted about her “Going for the Goals” idea, I knew this was something I needed to participate in. I am a huge goal setter, I think it’s super important to always have goals and constantly work to achieve them. The past few months achieving my goals hasn’t been a top priority, so I hope this month I can get back on track. I already have a 112 in 2012 page, which contains my goals for this year, but hopefully this month I can get a few of those checked off my list.  If you’re interested in sharing your goals too, head on over to Peanut Butter and Jenny to join in!
My goal for today… step outside my comfort zone
My goal for this week… get used to my new schedule without going crazy- I’m going to have to balance long days at work with countless hours of coaching cheerleading, so it is going to get a little stressful at times while I’m getting used to it
My goal for this month… do yoga at least 3x a week- I haven’t been able to attend any classes in a while and I have been too tired to do anything at home. I really want to make an effort to practice 3 times a week
My goal for summer… challenge myself to take my workouts outdoors- the gorgeous weather makes me want to stay outdoors. I think it’ll be fun to do my typical workouts but take them outdoors, and even try some new workouts
My goal for this year… transfer to a new school- this has been a big goal of mine for a while, but my plans changed a little bit. I need to refocus my plan to achieve this goal

A True Sunday

Saturdays have always been my favorite day of the week. It just feels like a true weekend day because you still have a day left until you go back to “weekday life” and don’t have to worry about anything. Saturdays are always exciting. I hated Sundays. Sundays meant stressing about work/school the next day. Slowly I am beginning to love Sundays more and more. Sundays mean relaxing, they mean resting and preparing for the week. Today my Sunday was a true Sunday!

I woke up around 9:30 without an alarm and didn’t have anywhere to rush off to. Amazing. I had time to hang out and read through my Google Reader for a while.

Google Reader is one of my favorite applications on my phone…so awesome!!

After I finally rolled out of bed, I got ready and decided to make it a true Sunday and made some pancakes. I don’t remember the last time I had pancakes so it was extra special. I made my Raspberry ‘n Spice Pancakes but subbed strawberries for raspberries because that’s all I had. Still, they were delicious! I topped them with a little bit of peanut butter, maple syrup and pecans.

After breakfast I headed over to my work to get some things done and had Subway for lunch…story of my life lately! It’s quick to grab and I don’t think I will ever get tired of my favorite sandwich, honey oat bread w/ pepper jack cheese toasted & lettuce, tomato, cucumber, spinach, banana peppers, extra pickles, sweet onion sauce and mustard! I didn’t take a picture because I get it all the time so I didn’t think it would be too exciting.

When I got home I decided the whole chipped nailpolish look wasn’t looking very good, so I decided to paint my nails. Pretty pink!

I never wear this color because I usually feel like it only looks good on me when I’m tanner, but I’m finally starting to tan so I chose that one!

Dinner was a special treat from my dad, flank steak fajitas! Flank steak is my favorite and it was perfectly seasoned.

Fajitas x2 with flank steak, cheddar cheese, grilled peppers & onions, beans & corn. So good!!

I’m sure I’ll have a bowl of cereal w/ coconut milk & strawberries for dessert…I’m obsessed with that lately. I’ve been finding some really great maple cereals that I can’t stop eating!

Tomorrow is a super busy day, work, orthodontist appointment & I’ll be starting to coach cheerleading again. Big day coming up so I’ll need to get some rest. Have a great night!!

10 Ways to Make June Spectacular

I don’t know about you, but I feel like time is going by so quickly. I really hope this summer goes by a lot slower than the past few months. The past few months have been a little crazy, so I thought I’d come up with a few ways to really make June awesome.

1. Go on an adventure- It’s easy to go on with our usual routines and not even notice the fun activites and sights around our own town!

2. Enjoy the gorgeous weather- It’s summer…take a second to enjoy the sun! It’s easy to breeze through summer complaining about the heat without recognizing how beautiful it is outside. Which leads me to…

3. Take your workout outdoors- It’s a fun change to go from the gym to the breezy outdoors. Working out doesn’t have to be all about running and lifting weights. Go swimming in the pool, put together a field games party for your friends/family, play tennis, etc.

4. Try a new food- A couple summers ago I tried starfruit while I lived in Hawaii and I loved it! It’s fun to find new foods and try them out…especially new fruits and vegetables!

5. Buy something special- There’s no better time to go get a mani/pedi than summer time!

6. Have a picnic- Go to the park, beach or even your backyard and pack a yummy picnic for your friends/family. It’s a fun and easy summertime activity!

7. Spend time with family, including those you don’t see often enough- Now that everyone’s out of school schedules may be easier to work around…enjoy your time with family you haven’t seen in a while

8. Try a new recipe- Finally make that recipe you’ve been dying to try! Find a great fruit/veggie recipe to rehydrate you after being in the sun all day.

9. Find a fun DIY project and complete it- Completing DIY projects is not only fun, you’re left with a great homemade product!

10. Take a couple yoga classes- If you haven’t tried yoga, give it a couple chances! Every class is different so it’s important to try a few of them out. It’s a great way to relax and get a great workout in.

Preparing for the Week

I hope you all are having a great Monday!! Luckily, I had the day off so I spent the day doing errands and relaxing. I started off the morning with a big cup of coffee

On the side I had a bowl of vanilla almond cereal with pecans, blueberries, blackberries and milk. It took me a while to eat this bowl because my teeth are really hurting from my Invisalign…I need to start eating softer foods for now! I loved the blueberries & blackberries, I rarely eat them so it’s a nice change.

I had a meeting to go to today so I decided to clean the house up a bit to kill time before. It’s crazy how much free time I have now that class is out. I keep thinking I should do some homework or something and then I remember I don’t have any. I could get used to this!

After cleaning the house I put together a quick lunch of Annie’s Mac & Cheese

 

Aaaaaaaaand tomatoes with sundried tomato basil oil and balsamic vinegar.

After lunch I went to my meeting at Starbucks and got a unsweetened passion iced tea and later went out to dinner with my friend. Chicken cesar salad and breadsticks for dinner!! Unfortunately I didn’t get a picture because I totally forgot. I feel like since I got my Invisalign I rush through my meals because I’m only allowed to have the aligners out for 22 hours a day. With all that rushing around I forget to take a picture of the meal before I eat it!

I was thinking about baking cookies tonight but I just remembered I have to wake up early for work tomorrow. Sad that the weekend is over!!

Lately

I can’t believe it’s been over 10 days since I last posted!! I promise, I haven’t been doing things that are too exciting…which is why I haven’t been posting. I am currently sitting down doing absolutely nothing for the first time in weeks so I thought I’d update the blog on things that’ve been happening. I promise I really am trying to post more now that my schedule’s changing!

1. I got Invisalign!

To be honest it kind of drives me crazy and is nothing like how I thought it would be, but I’ll live. I didn’t expect to get a top one because my bottom teeth were the ones I wanted to fix, but apparently my teeth are worse than I thought they were.

2. I tried this chia seed drink and I am obsessed.

I was a little nervous about the texture because of the seeds but they made it more fun to drink. And this flavor is awesome!!

3. I’m moving! Well, in a couple weeks. I never realized how annoying I was until I had to decorate a house. I am so picky it even drives me crazy. I feel bad for everyone around me.

4. I am finally done with the semester!!!!!!!!

I spent last weekend studying for finals and I am so glad it’s over. Studying is not my thing.

That’s about all the updating I have for you right now! I told you, things haven’t been too crazy over here. I’m working on a cookie recipe and a review to share, so hopefully those will be up next week!

Mom’s Day

 

I originally started typing this post yesterday (Sunday) but didn’t finish because of the

fun Mothers Day activities. So here it is now! 

Yesterday I was lucky enough to spend the day with my parents. In the morning my

dadmade breakfast for the three of us, including eggs benedict. This was my first time

having it and I loved it.

My dad switched out the usual Canadian bacon with chicken for me, which was a

delicious change.

 

Saturday we went out and bought a blood orange tree and a lemon tree as well as

several smaller veggie plants.

Yesterday was all about planting them!My dad did a great job working on the garden for

my mom, I can’t wait to see the blood orange tree grow!! 

 

The weather was a little colder and cloudier than the rest of the week, but we had

planned to barbeque and we decided to stick with it! On the menu: bbq chicken, ribs, coleslaw,

corn and peach & blueberry pie for dessert. 

I wasn’t able to snap a picture of my meal, but I had a couple ribs, half of a bbq

chicken breast, corn (haven’t had this in way too long!!) and some coleslaw set aside

without the dressing. I love my mom’s coleslaw(cabbage, craisens, toasted walnuts,

sliced apples) and like it on it’s own without the dressing.

For dessert we had peach and blueberry pie and homemade whipped cream.

 

After dessert my mom and I sat down with a cup of peppermint tea and watched Stepbrothers.

The movie was so funny and it was the perfect way to end the day!

I’m ready for this week to get started, one week closer to summer!!

 

My mom is the most hilarious, supportive, caring and loving person I know. Mom, I hope

A-Z Survey

I’ve been wanting to do this survey for a while because, well, I love surveys. During the Myspace days I was doing surveys almost daily. Not because I’m really that interesting, but because I think they’re so much fun. I saw this one on Janetha’s blog as well as many others after that. I’m just now catching up on the A-Z survey trend, but better late then never!

A is for age:

19, 20 in August. It’s always so weird when people ask me my age and I really have to think about it. I feel like I am so much older and I get shocked responses every time I tell someone my age. They always think I am older, too! Not sure if that’s a compliment or not.

B is for breakfast today:

Today’s breakfast was oatmeal with blackberries, peanut butter and pecans. With coffee and coconut milk on the side. I’ve been adding vanilla coconut milk to my coffee every morning and it’s so good. It adds a little bit of coconut flavor without being too overpowering.

C is for currently craving:

Fro-yo! I got some on Thursday after not having it for a while and I have had the craziest craving for it ever since! My favorite at the moment is caramel pecan & white chocolate with sour gummy worms, butterfinger and strawberries. Weird combo, but it tastes heavenly.

D is for dinner tonight:

Tonight I had homemade cheese enchiladas!

E is for favorite type of exercise:

I love yoga, but lately I’ve been loving strength training. I had never done it before and I’m doing it a lot more lately. I feel so powerful everytime I’m done with my workout!

F is for an irrational fear:

It sounds weird, but whenever I have the windows down in my car and I stick my hand out the window I’m terrified of my ring falling off my finger. My ring comes off with a little bit of a struggle, so it’s almost impossible for it to be blown away by the wind but it still freaks me out. I usually close my hand when I put it out the window so the ring doesn’t blow away.

G is for gross food:

I absolutely can not stand mayonnaise. Keep it far away.

H is for hometown:

Northern California! Not giving any specifics here :)

I is for something important:

My family. They are the ones that will be there when no one else is. They are #1!

J is for current favorite jam:

I don’t even know what to pick for this…but I have been loving my acoustic Pandora station. I love everything acoustic lately.

K is for kids:

Just my fur kids…Pepe, Cheddar and Puff. They’re the best.

L is for current location:

My bed…I’m exhausted after a long day!

M is for the most recent way you spent money:

Grocery shopping, picked up some vanilla coconut milk, cereal (obsessed) and food for Mother’s Day tomorrow!

I can’t really think of anything I need right now, to be honest!

O is for occupation:

I am a cheerleading coach and I work with kids. Best jobs ever!

P is for pet peeve:

I can’t stand bad drivers. People who speed through parking lots, get super impatient on the road or people who try to speed through other people going the speed limit and then get caught up by another person who’se going the speed limit. I always wonder if they realize how silly they look.

S is for favorite healthy snack:

I’m definitely a snacker, but it’s not always healthy. I’d say my favorite healthy snacks are Larabars and apples with peanut butter. Justin’s Maple Almond Butter is delicious with apples, too.

T is for favorite treat:

I’d say this is either chocolate cake (homemade) or brownies (again, homemade). I do love me some fro-yo, though.

U is for something that makes you unique:

I’m not really sure about this one. I guess the fact that I’m a hard worker at a young age. I like to have a million different projects on my plate, fundraising, volunteering, work, etc. I like to stay busy!

V is for favorite vegetable:

I love butternut squash!! Or sweet potato…those are the best too.

W is for today’s workout:

A whole lot of nothing! I walked around the gardening store, ate a yummy lunch with my parents, and stood at a fundraising thing. No working out!

Two Weeks Later

Oh, hello there.

Remember when I disappeared for two weeks? Oops.

But for real, I have been in a bit of a rut lately. I feel like I’m blogging about the same things, scrambling to post something…until I realized that’s not what I wanted this blog to be about. I started this blog to share recipes, ideas, tips & tricks. I realized I felt like I had to post everyday and when I didn’t have enough time, I got stressed out over it. Again, that’s not what this blog is supposed to be about.

Lately I’ve been exercising more, doing different things. I’ve been doing strength training on my own, something I’ve never done before. I haven’t been eating foods that make me happy, including lots of cereal. I haven’t been taking pictures of every little thing. And it’s been awesome.

I’ve been powering through school and my long days, not really taking time to stop and breathe. I think this is when I got into my rut.

I want to bring it back to the recipes. The random ideas. Sharing tips to living a busy life and fitting health into it. So that’s what I’m going to do. I’m moving in a few weeks so my blog will have a little bit of my decorating ideas. My favorite recipes. My journey through learning how to exercise again. Of course, there will also be randomness.

My one year blog birthday is coming up in June and I think it’s a good time to make these changes. I hope you’ll enjoy them as much as I will!

Friday Chat

1. Tonight I went to dinner with my mom and ate sushi. #1 it’s awesome to get to hang out with my mom #2 we had the best sushi  ever. We tried out a new-to-us place and split two rolls. One had avocado, crab, tuna and tempura shrimp and the other was tuna, mango and chopped macadamia nuts on top. Heaven.

2. I really really really want these cookies right now. Make them for me?

3. I bought a pair of TOMS (these ones, to be exact) but when they arrived they were too small. I exchanged them for a little bigger size and now I can’t wait for them to come back. Dear shoes: please hurry.

4. This is my favorite meal lately. Seriously. TJ’s Maple Pecan Cereal, coconut milk (latest obsession) and sliced strawberries. Try it now.

5. However, I am willing to trade in my current favorite breakfast for this one. AKA this weekend’s project. I’ve never even tried quinoa, but I am pumped.

6. My Google Reader starred items used to hold the blog posts I wanted to include for Shout Out Sunday. It now holds a million recipes I need to make rightthisverysecond.

7. This weekend is going to be full of gorgeous weather and I can’t wait to go to the beach again.

And now I’m off to eat a bowl of cereal. Duh.
