Weekly Challenge #2: Vegetarian Week Recap

Monday 6/27: I started off WC#2 with a bang!!

What’s better than cake for breakfast? You guys sent me some great comments about fully giving up all meat…including fish. This was my main concern because it is really the only meat I eat lately. Later on, I gave you a few health benefits of being vegetarian.

Tuesday 6/28: I started off Tuesday morning with a protein-filled greek yogurt bowl. By far one of my favorite breakfasts!!

Later that night I shared with you a great Veggie Wrap with Spicy Peanut Sauce recipe! You guys really seemed to like this recipe, especially the addition of sour green apple!

Wednesday 6/29: Wednesday morning I shared a few morning confessions. It feels good to know I’m not the only one who doesn’t wash her fruits & vegetables! (sorry Mom). I was not feeling good at all through the day. The second I got home I knew I wanted a grilled cheese and soup! Can’t fight that comfort food.

Thursday 6/30: Thursday morning started off with one of my other favorite breakfasts and the best smoothie I’ve ever had!!

Later that night I did something bad…I ate shrimp, which is obviously not vegetarian. Luckily, I forgave myself and hopped right back onto the challenge bandwagon!

Friday 7/1: Friday morning brought another smoothie in a bowl! I seriously can not get enough of smoothies. They are way too good!!

Saturday 7/2:
Saturday’s morning started off a little rocky, but I ended up eating REAL food once we arrived in Arizona. Thank goodness!

Overall:
Even though I did slip up once, I am so happy I did this challenge. I proved to myself there are a ton of great meals focusing on veggies. Now I have a reason to chop up some extra veggies….hello veggie wraps with spicy peanut sauce!!!!
