Hey everyone!! Hope you all had a great Sunday.
I started off my morning with a bowl of Strawberry Fields oatmeal and then got to work on baking some bread.
Yes, bread! I honestly never thought I’d see they day that I baked a loaf of bread. A couple days ago I saw Jessica’s Brown Butter Whole Wheat Soda Bread and knew I had to try it out. For some reason, breads that require yeast freak me out and I get too scared that I’m going to screw it up. Luckily, this recipe requires no yeast at all. It was meant to be.
It was crazy simple to throw together and so delicious. I’m so glad the recipe makes two loaves because the first one is already almost gone! I was planning on freezing the second loaf but now I’m not even sure it will last long enough to make it to the freezer.
Of course I paired it with some leftover chili with lots of cheese on top, which made for the perfect lunch!
I was even able to bake despite the distractions from this little punk:
Is that not the guiltiest face you’ve ever seen? He kept banging on the sliding door to get into the laundry room to eat his breakfast, then banging on the door to get out because he was bored in there and he wasn’t actually hungry. This continued over and over and over and over again.
