While September is widely known as “Yoga Awareness Month,” it is also National Better Breakfast Month. whodathunkit?
I’m not really sure what this means, but in my mind it means September is the month to clean up our breakfasts and healthify them a bit.
I’m not the girl who eats Lucky Charms for breakfast every morning with a side of chocolate cake, but I could stand to clean up my breakfast a bit. A little less creamer in the coffee, a little more fruit in the oatmeal. “They” say that breakfast is the most important meal of the day so I think it’s worth a shot to make an effort to eat something nutritious at the beginning of my day.
I already created my September goals, but I’m adding a Better Breakfast challenge to this month. Every Sunday (meaning the next 3) I will post a delicious healthy breakfast recipe. On the days I eat breakfast I will also be posting that as well. I hope you guys will share your breakfasts along the way too!
To start it off:
Pumpkin Spice Oatmeal

Prep Time: none
Cook Time: 7 minutes

Ingredients (1 large bowl)
- 1 cup almond milk (or any milk)
- 1/2 cup water
- 1/2 cup rolled oats
- 1/2 peeled very ripe banana
- 1 cup canned pumpkin (plain, not pie filling)
- 1 tsp vanilla extract
- dash of cinnamon
- dash of nutmeg
- 1/2 to 1 tbsp brown sugar (depends on how much sweetness you want)
- sprinkle of shredded coconut
Instructions
Place medium pan over medium heat. Pour milk, water and oats into pan. Wait until it begins to boil and add 1/2 banana. Once the banana begins to soften, take a fork and whip banana into the oats. Add pumpkin. Add spices (cinnamon, nutmeg), brown sugar and vanilla. Heat through and pour into a bowl. Top with shredded coconut and other desired toppings. My favorites: coconut, pecans, peanut butter.
The dogs were dying to play once I walked into the kitchen, they must have been awake for hours!

So of course I left my breakfast in the microwave to stay warm so I could play with my favorite dogs
I love waking up to them in the morning! I really missed having them around when I lived in Hawaii, the best parts about California are my doggies and kitty!

I love oatmeal for breakfast and have it almost every morning! Sometimes on the weekend I’ll make myself some protein pancakes..thats a “special” meal for me since it takes longer to make
