Good morning! I wasn’t sure if I was going to make it through Monday…for some reason it was difficult to start this week off! Maybe it was because I knew many people had the day off from work/school and I didn’t? Or because it was raining when it was supposed to be warm & sunny? Or because I know there is so much going on this week? Okay, time to pull myself together
Because yesterday was so strange and I wasn’t ready to accept that it was Monday, I totally forgot to post the weekend post recaps! Oops. I hope you all are a little less frazzled then I am this week! In case you missed them, here were the posts from this weekend:
My Weekly Challenge: Eat More Fruits & Veggies
Lately I’ve been slacking in the fruit & veggie department. I haven’t had too much time to put meals together, so many breakfasts and lunches are grab & go.
As I mentioned yesterday, my garden exploded and I now have a million tomatoes in my kitchen.
I’ll take this as a hint that I should be eating more veggies.
In my How-To series, I’ve given my favorite tips for sneaking veggies in. While I don’t necessarily have time to make a smoothie (with spinach) every morning, I do plan on using my tips to bring veggies back into my life.
How will I do it?
- Fruit in the morning- I pretty much always add either strawberries or peaches to my breakfast, so I will continue to do that. Any piece of fruit counts!
- Fruit/veggies with lunch and dinner- I will eat some type of fruit or veggie with lunch and dinner.
- A salad a day- I’ve recently fallen in love with the simpleness of building salads, even though they are so delicious. Not to mention, I have about 2.5 million tomatoes to eat. I will be fitting a salad into my day, everyday. Note: I’ll be adding a salad to one of my meals, not replacing my meal with a salad.
- Try new fruits/veggies- When I lived in Hawaii I tried so many new fruits and vegetables, it was awesome. I think it’s really important to always try new foods, so I am going to search for new fruits and veggies that I haven’t tried before, or that I rarely eat.





Those tomatoes look so good! Makes me wish I had a garden. My favorite fruit seems to be bananas because you can get them all year but I love strawberries and peaches in the summer. I’m also loving squashes this season.
I’m getting tired of salads and have been enjoying veggie chili made in my crock pot.
p.s. You lived in Hawaii? So jealous! I want to go there so bad

And yep! I lived on Oahu for a little while…Hawaii is beautiful, I can’t wait to go back and visit!
Always such a good goal! My favorite fruit is a pink lady apple–I could eat ten of those a day, but they have such a short season
And I try to get a salad a day too–which usually means putting leftovers on lettuce for lunch. That counts, right? I’ve also been adding spinach to various cooked items if possible.

I need to do this too! I usually get lazy and I have yogurt, smoothies, granola like all the time. I usually always have fruit with breakfast but I need to start having more veggies at lunch time
I try to have a huge salad once a day!! It’s my favorite way to get in 197 servings of veggies at once hah

Salads are the easiest way to get in all those veggies!! I’m still trying to figure out how to make them bulky enough to fill me up, though. For now I just add half of a sandwich or something on the side.
