Happy Tuesday! Hope you all are having a great day so far.
Unfortunately I’m starting the week off sick, but I’m heading over to the doctor today to get that figured out. Yesterday was crazy busy so it was nice to finally come home and rest.
I had to wake up early yesterday morning, so the night before I whipped up some oatmeal for the morning.

I’m not a fan of cold overnight oats, it just tastes a little off to me. Instead, I make the oatmeal as if I was eating it that night, but then I throw it in the fridge. In the morning I just heat it up and it’s completely made in just a couple minutes…perfect for bringing to work on those early days.
Yesterday I didn’t get a chance to put together a meal plan for this week, so here it is:

I didn’t like overnight oats the first time I had them either. Once I put more yogurt in it though, it came out SOO much better. Now I love them! Feel better!

I put 1/3 C. Yogurt AND 1/3 C. Almond Milk

Then about 1/3 or 1/2 C. Oats, 1/2 a banana and 1 Tbs. Chia seeds.
I mix all of that together, put it in the fridge over night, and add whatever I want in the morning. Either more fresh fruit, granola, etc. It may need a dash more of milk in the morning to loosen it up!

Your meal plan sounds YUM, nothing planned for me, but I’ll be house-sitting which means I get to play my own personal game of Chopped with whatever I can find in their house
OH, and I get Indian buffet for lunch today, ohhh yeah.

Ooh I’m dying to find a great Indian restaurant around me! That sounds like it’ll be fun, I love putting together meals with random ingredients laying around. Sometimes those are the best ones!
It definitely makes me step outside of my comfort zone/regular eats, so I’m looking forward to the opportunity to switch things up.

I didn’t like overnight oats at first. I studied different concepts and tweaked them to fit my taste, and they turned out great. This morning was the first time since the summer, um I mean last summer, I had them. So yummy, especially with a container of Chobani apple cinnamon!
