I’m pretty sure every weekend should be a 3 day weekend because today was fantastic. After a pretty much completely unproductive weekend I finally got things done today!
My morning started off with a later wake up call than normal Mondays, thank goodness. I was not ready to go back to real life today.
I had time to put together a real breakfast before my dentist, which turned out to be a really good idea because I couldn’t end up having lunch until around . Breakfast was a bowl of pumpkin oats with pomegranate arils, raspberries (love having these around the house again), blueberries, pecans, cinnamon, vanilla, nutmeg and peanut butter. Of course a side of coffee was also necessary. After seeing how my days go without coffee on Friday, I know how pathetic I am without it.
After breakfast I headed over to the dentist. This was my third appointment in the past week and I am happy to say I won’t have another appointment for a few more months. Because my mouth was numb I wasn’t able to eat lunch until 3:30. Yes, 3:30.
Needless to say, I was a hunger monster by the time the numbness wore off and I could finally eat. I went to a local health food store to pick up some ingredients to make granola bars later on and decided to grab my favorite salad while I was there. They have awesome prepared foods there and that was exactly what I needed after waiting so long for lunch.
This is one of my favorite salads in the world, honestly it is so good. It includes dried cranberries, feta cheese, candied walnuts (my favorite), spinach, cherry tomatoes & a super tangy raspberry vinaigrette. So good. I quickly realized I had to eat super slowly and tiny bites because of my mouth hurting, but eventually I finished it.
I also picked up a new foundation because I decided the one I bought from Ulta a few weeks ago is a little too dark.
I decided to try the Loreal True Match and hopefully it’ll match my color a little better. I’m also wearing my new Zoya nail polish in this picture from my January Birchbox, I love it! It’s super thick and it’s quickly becoming one of my favorites.
I’ve also been working on a new granola bar recipe today that I’m really excited to share with you all.
I figured now is the perfect time to have granola bars lying around the house because I’m starting school again and will need snacks to grab!
Dinner was a quick reheat of a pasta casserole I made on Saturday with shells, ground turkey, canned tomatoes, cheese and lots of spice. I also had a couple pieces of sourdough on the side.
I was hesitant to add ground turkey to this because it can so easily be dry and bland. I really wanted it to be flavorful and it actually turned out great!

Any salad with fruit, cheese, and nuts in it with a fruity dressing is always amazing! I love homemade granola bars. Perfect snacks!
Totally agree, those are components to a delicious salad!
No food until 3:30?? I would NOT be a happy gal. Granola bars, on the other hand, DO make me happy–if they’re the homemade version with all sorts of real goodies in them.

I turn into a whole other person when I’m hungry so I was very happy to finally be able to eat! The granola bars turned out delicious, I’m excited to share the recipe!
My favorite salad to order at a nearby restaurant has feta, dried cranberries, and candied walnuts, too! It is so delicious and the best combination, in my opinion!
