What I Ate Wednesday #31

Happy Wednesday! Time to celebrate with WIAW. This post is going to be short & sweet, but I wanted to mention that I don’t post everything I eat.

Breakfast: 

I knew I had to wake up early, so I threw a bowl of oats, water, pumpkin, cinnamon, nutmeg and vanilla extract into the fridge to hang out overnight. In the morning I heated it up and added strawberries, pecans and peanut butter. For some reason, these oats turned out super pumpkiny even though I only put in the usual 2 tbsp. Maybe it’s because the oats soaked in the pumpkin? Anyway, it was delicious and super easy in the morning. Of course I also had a big cup of coffee on the side!

Lunch: 

By lunch time I was starving so I headed over to the deli and grabbed a turkey, cheddar, lettuce, tomato, pickle & mustard sandwich on sourdough. I forgot to take the picture until one half was half eaten, but I ended up eating the whole thing, and it was delicious.

On the side I also had my new favorite drink,

I loved the raspberry lime flavor, definitely my favorite so far!!

Dinner:

I was pretty exhausted by dinner time, so I threw together a pizza with pre-made dough, mozzarella, parmesan, diced jalapenos and turkey pepperoni. So good and it definitely satisfied my pizza craving!

  5. OK, so I thought I was a crazy person when I accidentally discovered that strawberries and pumpkin butter are delicious together…but JUST this morning I’d been haunted by how I can best combine the flavors again.

    Glad to see I’m not the only one experimenting in that direction…

  6. I love putting pumpkin into my oatmeal but have yet to try an “overnight” version. Will definitely be doing that soon now!

      It’s so easy and added a lot of pumpkin flavor adding that overnight. I used to add it in the morning but I’ll do it this way from now on. I haven’t tried it cold but heating it up in the morning is delicious!

  7. Your breakfasts never cease to look amazing. And Trader Joe’s has a raspberry-lime seltzer water that I absolutely love–definitely my favorite flavor.

      Really? I’ll have to stop by TJ’s this weekend and pick some up! I didn’t realize how much I love this water until last weekend and now I’m hooked!!

      • Yep, and they’re cheap and big! The flavors are fairly limited (I think there’s just plain and then three or four others?), but the berry and orange are reaaallly good. Pretty much live on them in the summer. Them and food, that is.

  9. Making a pizza always sounds so challenging, but when I read “threw together” I think maybe even I could attempt it!

      It’s funny, I used to think pizza was too much of a task for late nights, but now it’s my go-to dinner (most of the time) when I get home late. Just pop the crust in the oven to get golden while preparing the toppings, then add them onto the crust & cook for about 15 more minutes. Doesn’t take too long!
