Seeing Green

I have a confession: I didn’t wear green today.

In fact, I wore sweatpants all day and stayed inside, away from the on-again-off-again rain outside. I’m totally cool with that. I have not had a weekend where I literally did not have to do anything in such a long time, and it’s amazing.

I did, however, try to “green-up” my meals today. More veggies during the day=more cupcakes I can eat tonight. I’m just sayin’.

Breakfast:

I slept in until 10 (again, amazing) but didn’t end up going to make anything for breakfast until around 11. I wasn’t too hungry so I whipped up a green (purple) smoothie with mixed fruit, berries, almond milk, cranberry juice and lots of spinach! Of course once my smoothie was poured into my cup I realized I should have added peanut butter (one of my favorite smoothie additions) but it was too late. Next time!!

Lunch:  

For lunch I warmed up some artichoke mac & cheese I made earlier this week and had a salad on the side. I love the mac & cheese and I definitely want to play around with the recipe and add chicken or spinach as well next time. The salad included spinach, arugula, tomatoes, salt, olive oil and balsamic vinegar. I’ve been loving this salad combo lately, super simple! I also had the rest of the tomato on the side and a bit of bread.

Dinner: 

I decided to make a pizza for dinner because I had some arugula I needed to use up and I wanted to put it on a pizza. Unfortunately, the dough decided not to work with me so I ended up with a small pizza with lots of mozzarella, shrimp, tomato, buffalo sauce, parmesan and arugula, obviously. The arugula ended up meshing perfectly with the green theme today!

I actually had a pretty productive day despite the weather and being in my sweats all day. Room is cleaned, desk is cleaned and all of my clothes are cleared off my chair. Does anyone else throw all of the clothes they tried on & decided against onto their chair when they’re getting ready? The clothes get piled up so high you just never want to clear them off. It’s one of my worst habits because I hate hanging clothes up in my closet!!

I’ll be spending the rest of my not so crazy  St. Patricks day working on a project, painting my nails and watching movies! Hope you all have a great rest of the holiday!

  1. We totally avoided the gigantic NYC parade craziness by escaping to Brooklyn for brunch, apartment lease signing, and vegging out in a park! I can’t do the whole “party like crazy during the day” haha last time I did that was during senior year of college and i think i was sick for like, a week after!

      Congratulations!! That’s so exciting! There wasn’t much happening over here so I was happy with having a low-key day :)
